Yum Yum Sauce

  • 1/4 cup light mayo
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sriracha


Instructions

  1. Cook the Broccoli: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the broccoli florets and cook without stirring for 2-3 minutes, allowing one side to char. Stir and cook for an additional 2-3 minutes until the broccoli is tender and a deep green color. Remove from the pan and set aside.
  2. Brown the Ground Beef: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the ground beef and allow it to sear without stirring for a few minutes to develop a browned crust. Then break it apart and continue cooking until browned and cooked through.
  3. Add Aromatics: Add the minced garlic and ginger, if using, to the browned beef. Cook for 1-2 minutes until fragrant, stirring frequently to prevent burning.
  4. Simmer with Teriyaki Sauce: Pour the teriyaki sauce into the skillet over the beef mixture. Stir well to coat all the meat, then let it simmer for 2-3 minutes to allow the flavors to meld and the sauce to thicken slightly.
  5. Combine Broccoli and Beef: Return the cooked broccoli to the skillet and stir together with the beef and sauce. Cook for another 2-3 minutes until everything is heated through and well coated.
  6. Prepare Yum Yum Sauce: While the beef and broccoli finish cooking, whisk together the light mayo, rice vinegar, honey, and sriracha in a small bowl until smooth and creamy.
