Filling
- 2 cups (312 g) frozen spinach, thawed and excess water squeezed out
- ½ cup (56.5 g) mozzarella cheese, shredded (half of 1 cup divided portion)
- ½ cup (50 g) parmesan cheese, grated
- ½ cup (84 g) artichoke hearts, drained and chopped
- ½ block (4 ounces) cream cheese, softened
- ¼ cup (57.5 g) sour cream, room temperature
- 1 teaspoon garlic, minced
- ½ teaspoon kosher salt
- â…› teaspoon cayenne pepper
Topping
- ½ cup (56.5 g) mozzarella cheese, shredded (remaining half of 1 cup divided portion)
Dough
- 1 tube (8 ounces) refrigerated crescent dough
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) and lightly spray a 24-count mini muffin tin with nonstick cooking spray to prevent sticking.
- Prepare Filling: In a large bowl, combine the thawed and squeezed spinach, half of the mozzarella cheese, parmesan cheese, chopped artichoke hearts, softened cream cheese, sour cream, minced garlic, kosher salt, and cayenne pepper. Stir well until all ingredients are evenly incorporated.
- Roll Out Dough: On a lightly floured surface, roll the crescent dough into a 9×14-inch rectangle. If using perforated crescent dough, press the seams firmly to seal and prevent filling leakage.
- Cut Dough: Cut the dough into 24 equally sized squares, approximately 2½ inches each, to fit into the muffin tin.
- Form Cups: Press each dough square into the prepared muffin cups, forming a cup shape for filling.
- Fill Dough Cups: Spoon two heaping teaspoons of the spinach dip mixture into each dough cup, distributing the filling evenly.
- Add Topping: Sprinkle the remaining half cup of shredded mozzarella evenly over the filled cups.
- Bake: Bake in the preheated oven for 15-18 minutes, or until the dough is golden brown and cooked through.
- Serve: Remove from oven and serve warm for the best taste and texture.
Notes
- Make sure to squeeze out as much water as possible from the thawed spinach to avoid soggy bites.
- If using perforated crescent dough, sealing the seams is important to prevent filling from leaking during baking.
- These bites can be made ahead and reheated in the oven at 350°F for about 5-7 minutes.
- For a spicier kick, add extra cayenne pepper or a dash of hot sauce to the filling.
- Leftovers can be refrigerated for up to 3 days in an airtight container.
