- 1 cup fresh lettuce, chopped
- 2 tablespoons tahini
- 1 tablespoon lemon juice (optional, for tahini sauce)
- 1-2 tablespoons water (optional, to thin tahini sauce)
Instructions
- Prepare Chickpeas: Preheat your oven to 400°F (200°C). Drain and rinse the chickpeas well, then pat them dry with a kitchen towel to remove excess moisture.
- Season Chickpeas: In a mixing bowl, toss the chickpeas with olive oil, paprika, cumin, and salt until evenly coated.
- Roast Chickpeas: Spread the seasoned chickpeas on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, shaking the pan halfway through, until crispy and golden brown.
- Prepare Tahini Sauce: In a small bowl, whisk together tahini and lemon juice. Add water a little at a time until the sauce reaches a smooth, drizzleable consistency. Season with a pinch of salt if desired.
- Assemble Wraps: Lay each tortilla flat and evenly distribute roasted chickpeas down the center. Top with chopped lettuce and drizzle with tahini sauce.
- Serve: Roll up the tortillas tightly into wraps. Slice in half if preferred and serve immediately while the chickpeas are warm and crispy.
