Description

Tender chicken breasts are cooked slowly in a savory sauce made with cream of chicken soup, Italian seasoning, and fresh mushrooms, then finished with sour cream for richness.

Sauce

  • 2 cloves fresh garlic, minced
  • 8 oz cremini mushrooms, sliced
  • 10.5 oz can cream of chicken soup
  • 1 cup chicken broth (low-sodium)
  • 1 packet Italian dressing mix
  • 1/2 cup unsalted butter
  • 1 cup sour cream (room temperature)


Instructions

  1. Prep: Spray the inside of the slow cooker with non-stick spray to prevent sticking. Place the pounded chicken breasts evenly at the bottom of the slow cooker.
  2. Mix Sauce: In a medium bowl, whisk together the cream of chicken soup, Italian dressing mix, and chicken broth until the mixture is smooth and well combined.
  3. Assemble: Pour the prepared sauce mixture over the chicken breasts in the slow cooker. Evenly distribute the sliced cremini mushrooms on top of the chicken and sauce.
  4. Cook: Cover the slow cooker and cook on the low setting for 6 to 8 hours or on high for 3 to 4 hours, allowing the chicken to become tender and absorb the flavors.
  5. Finish: About 15 minutes before serving, stir in the room temperature sour cream until fully incorporated. Season with freshly ground black pepper to taste. Garnish with chopped fresh parsley if desired, and serve hot.
