Ingredients
Scale
Brownie Base
- 1 1/4 cups cottage cheese
- 3 egg yolks (from large eggs)
- 1/2 cup cocoa powder
- 1/4 cup collagen
- 1/2 cup sweetener (such as erythritol or stevia blend)
- 2 tbsp coconut flour (Bob’s Red Mill recommended)
- 1 tsp chocolate liquid sweetener
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp espresso powder
Topping
- 1/2 cup chocolate chips (sugar-free for keto)
Instructions
- Preheat and Prep: Preheat your oven to 350°F (175°C) and grease or line an 8×8 inch baking pan with parchment paper for easy removal.
- Blend Wet Ingredients: In a blender or food processor, combine the cottage cheese and egg yolks. Blend until smooth and creamy to create a uniform batter base.
- Add Dry Ingredients: To the blended mixture, add cocoa powder, collagen, sweetener, coconut flour, chocolate liquid sweetener, vanilla extract, baking powder, salt, and espresso powder. Blend again until all ingredients are fully incorporated into a smooth batter.
- Mix in Chocolate Chips: Stir in the sugar-free chocolate chips gently to distribute evenly without breaking them up.
- Pour and Bake: Pour the brownie batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out with just a few moist crumbs attached.
- Cool and Serve: Allow the brownies to cool completely in the pan on a wire rack before cutting into squares. This helps them set and improves texture.
Notes
- Use a high-quality sugar-free sweetener blend to get the best taste without impacting blood sugar.
- Collagen powder adds protein and helps with the fudgy texture but can be omitted if unavailable.
- Espresso powder intensifies the chocolate flavor—do not skip for best results.
- Store brownies in an airtight container in the fridge for up to 5 days or freeze for longer storage.
- For a dairy-free alternative, substitute cottage cheese with a plant-based soft cheese, but texture may vary.
