Description

This Sheet Pan Greek Chicken Gyros recipe offers a simple and flavorful way to enjoy a classic Mediterranean dish. Tender chicken breasts are marinated in a zesty blend of lemon, garlic, and oregano, then roasted alongside colorful bell peppers. Served with homemade tzatziki sauce and wrapped in pita bread, this meal is perfect for a quick weeknight dinner or casual gathering.

Ingredients

Scale

Chicken and Marinade

  • 3-4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 2 tsp dried oregano
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper

Vegetables

  • 2 bell peppers (any color), sliced

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 tbsp fresh dill, chopped
  • Salt and pepper to taste

Optional

  • Pita bread, for serving

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Prepare Marinade and Marinate Chicken: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add the chicken breasts and coat them thoroughly with the marinade. Allow the chicken to marinate for at least 15 minutes to absorb the flavors.
  3. Prepare Vegetables: Slice the bell peppers into strips and toss them in the remaining marinade to infuse flavor.
  4. Arrange on Baking Sheet: Place the marinated chicken breasts on one side of the prepared baking sheet, and spread the sliced bell peppers on the other side for roasting.
  5. Roast: Roast the chicken and vegetables in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.
  6. Make Tzatziki Sauce: While the chicken roasts, prepare the tzatziki sauce by mixing Greek yogurt with grated and drained cucumber, chopped fresh dill, and salt and pepper to taste.
  7. Assemble Gyros: Once the chicken is cooked, slice it thinly. Serve the roasted chicken and bell peppers wrapped in warm pita bread with a generous dollop of tzatziki sauce.

Notes

  • Marinate the chicken for longer (up to 2 hours) for deeper flavor.
  • Ensure the cucumber is well drained to prevent watery tzatziki.
  • You can add sliced red onion or tomatoes for extra freshness in the gyros.
  • Use a meat thermometer to check the chicken’s internal temperature for perfect doneness.
  • Leftover chicken and veggies can be stored in an airtight container in the fridge for up to 3 days.
