Description

This Sausage and Tater Tot Breakfast Quiche is a hearty and comforting dish perfect for a weekend brunch or a special breakfast. Featuring a crispy tater tot crust filled with savory ground breakfast sausage, fluffy eggs, creamy low fat cottage cheese, and melted mozzarella, this quiche offers a delightful combination of textures and flavors that will please the whole family.

Ingredients

Scale

Crust

  • 2 cups frozen tater tots

Filling

  • ½ pound ground breakfast sausage
  • 6 large eggs
  • ½ cup low fat cottage cheese (2%)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup freshly grated mozzarella cheese

Garnish

  • Freshly chopped parsley (optional)

Instructions

  1. Preheat and prepare crust: Preheat the oven to 400°F (200°C) and grease a 9-inch deep-dish pie dish with butter. Arrange the frozen tater tots evenly in the pie dish and bake for 15 minutes.
  2. Mash tater tot crust: Remove the partially baked tater tots and mash them gently into an even layer covering the bottom and sides of the pie dish to form the crust.
  3. Reduce oven temperature: Lower the oven temperature to 350°F (175°C) to prepare for baking the filling.
  4. Cook sausage: In a skillet over medium to medium-high heat, cook and crumble the ground breakfast sausage until fully cooked through. Remove from heat and let cool slightly.
  5. Prepare filling mixture: In a large bowl, whisk together the eggs, low fat cottage cheese, salt, and black pepper. Stir in the grated mozzarella cheese and the cooked sausage until well combined.
  6. Assemble and bake quiche: Pour the egg and sausage mixture evenly over the tater tot crust in the pie dish. Bake in the preheated 350°F oven for 30 minutes or until the center is set.
  7. Cool and garnish: Remove the quiche from the oven and let it cool for at least 5 minutes before slicing. Garnish with freshly chopped parsley if desired, then serve and enjoy.

Notes

  • For a crispier crust, you can bake the tater tots a few minutes longer before mashing.
  • Use turkey sausage as a leaner alternative to regular breakfast sausage if desired.
  • This recipe can be customized with additional veggies like bell peppers or onions mixed in with the filling.
  • The quiche slices best when allowed to cool slightly to set completely.
  • Leftovers store well in the refrigerator for up to 3 days and reheat nicely.
