Ingredients
Scale
Crust
- 2 cups frozen tater tots
Filling
- ½ pound ground breakfast sausage
- 6 large eggs
- ½ cup low fat cottage cheese (2%)
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup freshly grated mozzarella cheese
Garnish
- Freshly chopped parsley (optional)
Instructions
- Preheat and prepare crust: Preheat the oven to 400°F (200°C) and grease a 9-inch deep-dish pie dish with butter. Arrange the frozen tater tots evenly in the pie dish and bake for 15 minutes.
- Mash tater tot crust: Remove the partially baked tater tots and mash them gently into an even layer covering the bottom and sides of the pie dish to form the crust.
- Reduce oven temperature: Lower the oven temperature to 350°F (175°C) to prepare for baking the filling.
- Cook sausage: In a skillet over medium to medium-high heat, cook and crumble the ground breakfast sausage until fully cooked through. Remove from heat and let cool slightly.
- Prepare filling mixture: In a large bowl, whisk together the eggs, low fat cottage cheese, salt, and black pepper. Stir in the grated mozzarella cheese and the cooked sausage until well combined.
- Assemble and bake quiche: Pour the egg and sausage mixture evenly over the tater tot crust in the pie dish. Bake in the preheated 350°F oven for 30 minutes or until the center is set.
- Cool and garnish: Remove the quiche from the oven and let it cool for at least 5 minutes before slicing. Garnish with freshly chopped parsley if desired, then serve and enjoy.
Notes
- For a crispier crust, you can bake the tater tots a few minutes longer before mashing.
- Use turkey sausage as a leaner alternative to regular breakfast sausage if desired.
- This recipe can be customized with additional veggies like bell peppers or onions mixed in with the filling.
- The quiche slices best when allowed to cool slightly to set completely.
- Leftovers store well in the refrigerator for up to 3 days and reheat nicely.
