Description

A refreshing and tangy Lime Gelatin Salad that combines zesty lime gelatin, creamy lime sherbet, and fluffy whipped topping. Perfect for a light dessert or a sweet side dish, this chilled treat is easy to prepare and delightfully satisfying for summer gatherings or anytime you crave a sweet and creamy citrus dessert.

Ingredients

Scale

Gelatin Mixture

  • 2 packages Lime Gelatin (3-ounce packages)
  • 2 cups Boiling Water

Sherbet and Topping

  • 1 quart Lime Sherbet (can substitute with lemon or orange sherbet)
  • 1 carton Frozen Whipped Topping (8-ounce carton, thawed)

Instructions

  1. Prepare Gelatin: In a large bowl, combine two packages of lime gelatin with two cups of boiling water. Stir thoroughly until the gelatin is completely dissolved, ensuring a smooth base.
  2. Add Sherbet: Whisk in one quart of lime sherbet into the dissolved gelatin mixture. Continue whisking until the sherbet melts fully, creating a creamy, smooth blend.
  3. Fold in Whipped Topping: Gently fold in the thawed 8-ounce carton of frozen whipped topping. Folding gently preserves the airy texture while evenly mixing the whipped topping.
  4. Prepare Mold: Lightly coat an 8-cup ring mold with cooking spray to prevent sticking. Then, pour the gelatin mixture into the mold, spreading evenly.
  5. Chill: Place the mold uncovered in the refrigerator. Allow it to chill for at least four hours so the gelatin can fully set and firm up.
  6. Serve: To serve, run a knife around the edges of the mold. Dip the bottom of the mold quickly in warm water to loosen the gelatin, then invert the mold onto a serving platter to release the salad.

Notes

  • You can substitute lime sherbet with lemon or orange sherbet for a different citrus flavor.
  • Make sure the gelatin is completely dissolved in boiling water before adding sherbet for a smooth texture.
  • Do not stir vigorously when folding in whipped topping to keep the salad light and fluffy.
  • Chilling the mold uncovered allows the gelatin to set properly.
  • Use warm water carefully when inverting the mold to avoid melting the edges.
