Instructions
- Prepare Gelatin: In a large bowl, combine two packages of lime gelatin with two cups of boiling water. Stir thoroughly until the gelatin is completely dissolved, ensuring a smooth base.
- Add Sherbet: Whisk in one quart of lime sherbet into the dissolved gelatin mixture. Continue whisking until the sherbet melts fully, creating a creamy, smooth blend.
- Fold in Whipped Topping: Gently fold in the thawed 8-ounce carton of frozen whipped topping. Folding gently preserves the airy texture while evenly mixing the whipped topping.
- Prepare Mold: Lightly coat an 8-cup ring mold with cooking spray to prevent sticking. Then, pour the gelatin mixture into the mold, spreading evenly.
- Chill: Place the mold uncovered in the refrigerator. Allow it to chill for at least four hours so the gelatin can fully set and firm up.
- Serve: To serve, run a knife around the edges of the mold. Dip the bottom of the mold quickly in warm water to loosen the gelatin, then invert the mold onto a serving platter to release the salad.
