Description

Delicious No-Bake Chocolate Oatmeal Cookie Bars combine the hearty texture of rolled oats with rich peanut butter and chocolate for a perfect sweet treat without the oven. Quick to prepare and ideal for snacks or dessert, these bars offer a chewy, satisfying bite with a luscious chocolate topping.

Ingredients

Scale

Oatmeal Base

  • 2 cups old-fashioned rolled oats
  • 1 cup smooth peanut butter (or almond butter)
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Chocolate Topping

  • 1/2 cup semisweet or milk chocolate chips
  • 2 tablespoons unsalted butter
  • 1 tablespoon peanut butter (optional)

Instructions

  1. Prepare the Base: In a medium saucepan over low heat, combine the peanut butter, honey or maple syrup, cocoa powder, and salt. Stir gently until the mixture is smooth and fully combined.
  2. Add Oats and Vanilla: Remove the saucepan from heat. Stir in the vanilla extract, then add the rolled oats, mixing thoroughly until every oat is well coated with the chocolate peanut butter mixture.
  3. Press into a Pan: Transfer the oat mixture into a lined or greased 8×8-inch pan. Use a spatula or your hands to press the mixture firmly and evenly into the pan to create a compact base.
  4. Make the Chocolate Topping: In a small saucepan over low heat, melt the chocolate chips, unsalted butter, and optional peanut butter together, stirring frequently until the mixture is smooth and glossy.
  5. Spread the Topping: Pour the melted chocolate mixture evenly over the oat base. Use a spatula to spread it into an even layer ensuring full coverage.
  6. Chill and Set: Place the pan in the refrigerator for at least 1 hour to allow the bars to chill and set firmly.
  7. Cut and Serve: Once set, remove from the refrigerator, lift the bars out using the liner, and cut into 16 squares. Serve immediately or store in an airtight container refrigerated.

Notes

  • Use almond butter as a peanut butter substitute for a different flavor or to avoid peanuts.
  • Maple syrup can replace honey for a vegan option.
  • Pressing the mixture firmly into the pan helps bars hold together better.
  • Store bars in the refrigerator to maintain firmness and freshness for up to one week.
  • The optional tablespoon of peanut butter in the chocolate topping adds extra creaminess but can be omitted.
  • For a gluten-free version, ensure the oats are certified gluten-free.
