Description

This Lemon-Pepper Chicken recipe features tender boneless, skinless chicken breasts marinated in a zesty blend of fresh lemon juice, lemon zest, black pepper, garlic powder, oregano, and olive oil. Perfectly baked or grilled, it delivers a bright, flavorful, and juicy main dish that comes together quickly, making it an ideal choice for a healthy weeknight dinner.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)

Marinade

  • 2 large fresh lemons (zest and juice)
  • 1 tsp freshly cracked black pepper
  • 3 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt

Instructions

  1. Preheat oven or prepare grill: Set your oven to 400°F (200°C) if baking, or prepare your grill by cleaning and preheating it to medium-high heat.
  2. Make the marinade: In a bowl, whisk together the lemon juice, lemon zest, olive oil, garlic powder, dried oregano, freshly cracked black pepper, and salt until well combined.
  3. Marinate the chicken: Place the chicken breasts into a zip-lock bag or shallow dish and pour the marinade over them. Seal or cover and let it marinate for at least 30 minutes to allow the flavors to penetrate the meat.
  4. Prepare cooking surface: If baking, lightly spray a baking dish with nonstick spray. If grilling, brush the grill grates with oil to prevent sticking.
  5. Cook the chicken: For baking, place the chicken breasts in the prepared dish and bake for 25-30 minutes until the internal temperature reaches 165°F (74°C). For grilling, cook each side of the chicken breasts for about 6 minutes, or until fully cooked through and juices run clear.
  6. Rest and serve: Remove the chicken from heat and let it rest for 5 minutes to retain its juices before slicing. Serve with lemon wedges for added zest.

Notes

  • Marinating the chicken longer than 30 minutes, up to 2 hours, will enhance flavor.
  • Use a meat thermometer to ensure the chicken is cooked through and safe to eat.
  • For a crispier finish, broil the chicken for the last 2-3 minutes if baking.
  • Leftover chicken can be stored in the refrigerator for up to 3 days.
