Scale
Dry Ingredients
- 2 cups cornmeal
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Wet Ingredients
- 2 cups milk
- 2 large eggs
- 1/2 cup melted butter
Add-ins
- 1 cup corn kernels
- 1 cup shredded cheese
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the perfect temperature for baking the cornbread layers.
- Mix Dry Ingredients: In a large bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt thoroughly to prepare the base mixture.
- Whisk Wet Ingredients: In a separate bowl, whisk together the milk, eggs, and melted butter until well blended and slightly frothy.
- Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined to form a smooth batter without overmixing.
- Add Corn and Cheese: Gently fold the corn kernels and shredded cheese into the batter, distributing them evenly throughout.
- Prepare Cake Pan: Grease a cake pan lightly with butter or non-stick spray to prevent sticking, then pour half of the batter into the pan and spread evenly.
- Bake First Layer: Bake the first layer in the preheated oven for 20 minutes or until a toothpick inserted comes out clean. Remove from the oven and let it cool slightly.
- Bake Second Layer: Repeat the greasing and pouring process with the remaining batter, bake for another 20 minutes, and allow to cool after baking.
- Assemble Layers: Once both layers have cooled slightly, stack them carefully. Add your choice of frosting or toppings between and on top of the layers to finish your layered cornbread cake.
Notes
- You can substitute shredded cheese with your preferred varieties such as cheddar or Monterey Jack for varied flavors.
- For a spicier twist, add chopped jalapeños to the batter.
- Use fresh or frozen corn kernels; just thaw frozen corn before adding.
- Allow the layers to cool fully before stacking to prevent sliding or breaking.
- Optional toppings include honey butter, sour cream, or chive cream cheese spread.
