Description

A delicious and visually impressive Layered Cornbread Cake combining the savory flavors of cornmeal, sweet corn kernels, and melted cheese. This recipe features multiple layers baked separately and then stacked together, perfect as a unique side dish or a centerpiece for gatherings.

Ingredients

Scale

Dry Ingredients

  • 2 cups cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 2 cups milk
  • 2 large eggs
  • 1/2 cup melted butter

Add-ins

  • 1 cup corn kernels
  • 1 cup shredded cheese

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the perfect temperature for baking the cornbread layers.
  2. Mix Dry Ingredients: In a large bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt thoroughly to prepare the base mixture.
  3. Whisk Wet Ingredients: In a separate bowl, whisk together the milk, eggs, and melted butter until well blended and slightly frothy.
  4. Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined to form a smooth batter without overmixing.
  5. Add Corn and Cheese: Gently fold the corn kernels and shredded cheese into the batter, distributing them evenly throughout.
  6. Prepare Cake Pan: Grease a cake pan lightly with butter or non-stick spray to prevent sticking, then pour half of the batter into the pan and spread evenly.
  7. Bake First Layer: Bake the first layer in the preheated oven for 20 minutes or until a toothpick inserted comes out clean. Remove from the oven and let it cool slightly.
  8. Bake Second Layer: Repeat the greasing and pouring process with the remaining batter, bake for another 20 minutes, and allow to cool after baking.
  9. Assemble Layers: Once both layers have cooled slightly, stack them carefully. Add your choice of frosting or toppings between and on top of the layers to finish your layered cornbread cake.

Notes

  • You can substitute shredded cheese with your preferred varieties such as cheddar or Monterey Jack for varied flavors.
  • For a spicier twist, add chopped jalapeños to the batter.
  • Use fresh or frozen corn kernels; just thaw frozen corn before adding.
  • Allow the layers to cool fully before stacking to prevent sliding or breaking.
  • Optional toppings include honey butter, sour cream, or chive cream cheese spread.
