Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C). Prepare two 8-inch cake pans by greasing them and lining the bottoms with parchment paper for easy removal.
- Mix Ingredients: In a large bowl, combine the almond flour, granulated sweetener, baking powder, salt, and any optional spices such as cinnamon. Add the shredded carrot and mix well to distribute evenly.
- Add Wet Ingredients: Crack in the eggs and add vanilla extract if using. Stir all ingredients thoroughly until the batter is smooth and uniform. For even batter distribution in the pans, use a second sheet of parchment to press the batter down gently.
- Bake: Divide the batter evenly between the two prepared pans. Place them on the center rack of the oven and bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the cakes to cool completely in their pans. Once cooled, run a knife around the edges to loosen them and carefully remove the cakes from the pans. This prevents breaking.
