Description

A refreshing and savory Italian Sub Salad that combines classic deli meats and cheese with fresh vegetables and a zesty homemade Italian vinaigrette. Perfect for a quick, flavorful lunch or light dinner.

Ingredients

Scale

Salad

  • 3 cups freshly chopped Romaine lettuce
  • 2 ounces sliced turkey
  • 1/2 ounce sliced salami
  • 1/2 ounce sliced provolone cheese
  • 1 tablespoon banana peppers
  • 1 tablespoon sliced black olives
  • 6 cherry tomato halves

Dressing

  • 1 packet Good Seasonings Italian Dressing
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons white vinegar
  • 1 ½ tablespoons water
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon garlic powder

Instructions

  1. Assemble the Salad: Place the chopped Romaine lettuce in a medium bowl. Layer the sliced turkey, salami, provolone cheese, banana peppers, sliced black olives, and cherry tomato halves evenly over the lettuce. Drizzle 1 ounce of prepared Italian dressing over the top and toss lightly to combine before serving.
  2. Prepare Homemade Italian Vinaigrette: Following the instructions on the dressing packet, combine the Italian seasoning mix with 1/4 cup extra virgin olive oil, 2 tablespoons white vinegar, and 1 ½ tablespoons water. Whisk the mixture thoroughly to blend.
  3. Enhance the Dressing: Add the dried Italian seasoning, salt, black pepper, granulated sugar, and garlic powder to the dressing mixture. Whisk well again until all ingredients are fully integrated. Use immediately or refrigerate for a few hours to allow the flavors to meld.

Notes

  • You can substitute the deli meats for a vegetarian option by omitting the turkey and salami and adding extra cheese or beans.
  • Adjust the amount of banana peppers and olives based on your preference for spiciness and saltiness.
  • The dressing can be made in advance and stored in the refrigerator for up to 3 days.
  • For a lower-fat version, use reduced-fat cheese or less olive oil in the dressing.
