- 1 lb Beef Italian sausage, sliced
- 3 Bell peppers, assorted colors, sliced

- 2 tbsp Olive oil

- 4 Hoagie rolls
- 4 slices Provolone cheese

Instructions
- Brown the sausage: Heat olive oil in a large skillet over medium heat. Add the sliced beef Italian sausage and cook for about 5-7 minutes until browned. Remove the sausage from the skillet and set aside.
- Sauté vegetables: In the same skillet, add additional olive oil if needed. Sauté the sliced onion, bell peppers, and minced garlic until they are softened, approximately 8 minutes.
- Add tomatoes and seasoning: Stir in the crushed tomatoes and Italian seasoning. Season with salt and black pepper to taste. Bring the mixture to a simmer.
- Combine sausage and simmer: Return the browned sausage slices to the skillet, mixing everything together. Simmer on low heat for 10 minutes to allow the flavors to meld.
- Toast the rolls: Preheat the broiler. Place the hoagie rolls under the broiler and toast until lightly browned, about 2 minutes.
- Assemble and melt cheese: Fill each toasted roll with the sausage and peppers mixture. Top with a slice of provolone cheese and broil briefly until the cheese melts.
- Garnish and serve: Garnish the sandwiches with fresh basil leaves and serve immediately while hot and melty.
