- 1 teaspoon cinnamon
- 1/4 cup water
Instructions
- Prepare Chia Pudding: In a mixing bowl, combine the chia seeds, coconut milk, maple syrup, chai spice blend, and vanilla extract. Stir completely until all ingredients are evenly combined.
- Set Pudding: Cover the bowl with plastic wrap or a lid and allow the mixture to sit for at least 20 minutes. For best results, chill in the refrigerator for a few hours or preferably overnight to let the pudding thicken perfectly.
- Cook Apples: While the pudding sets, peel, core, and chop the apples into small pieces. Place them in a saucepan over medium heat along with the cinnamon and water, then cook for approximately 10 minutes or until the apples are soft and tender.
- Assemble and Serve: Once the chia pudding is thickened, stir it well. Divide the pudding into serving bowls and generously top each with the warm cinnamon apples. Serve immediately.
