Instructions
- Preheat the oven: Preheat your oven to 375°F and grease a 9 inch by 13 inch baking dish to prepare for baking the casserole.
- Cook the sweet potatoes: Bring a large pot of water to a boil on the stove. Add the peeled and cubed sweet potatoes, then simmer for about 15 minutes or until they are fork-tender. Drain the potatoes thoroughly in a colander.
- Mash the sweet potatoes: In a large bowl or the pot used to cook the potatoes, combine the drained sweet potatoes with ½ cup hot honey, ½ cup butter, ¼ teaspoon cinnamon, and ¼ teaspoon salt. Use an electric hand mixer or potato masher to mash everything into a smooth mixture.
- Spread in baking dish: Transfer the sweet potato mixture evenly into the greased baking dish, spreading it out as a base layer.
- Prepare the topping: Melt the remaining ¼ cup of butter in a medium bowl. Stir in the remaining ¼ cup of hot honey and ¼ teaspoon cinnamon until well combined.
