Description

This Hot Honey Sweet Potato Casserole is a delightful twist on the traditional dish, featuring tender mashed sweet potatoes blended with spicy-sweet hot honey and a crunchy pecan and corn flakes topping. Perfect as a flavorful side for holiday meals or cozy dinners, this casserole balances creamy, sweet, and spicy flavors while adding a satisfying crunch.

Ingredients

Scale

Sweet Potato Mixture

  • 3 pounds sweet potatoes, peeled and cut into 1-inch cubes
  • ½ cup hot honey
  • ½ cup butter
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt

Topping

  • ¾ cup hot honey (divided)
  • ¼ cup butter
  • ¼ teaspoon cinnamon
  • 3 cups corn flakes
  • ½ cup pecans

Instructions

  1. Preheat the oven: Preheat your oven to 375°F and grease a 9 inch by 13 inch baking dish to prepare for baking the casserole.
  2. Cook the sweet potatoes: Bring a large pot of water to a boil on the stove. Add the peeled and cubed sweet potatoes, then simmer for about 15 minutes or until they are fork-tender. Drain the potatoes thoroughly in a colander.
  3. Mash the sweet potatoes: In a large bowl or the pot used to cook the potatoes, combine the drained sweet potatoes with ½ cup hot honey, ½ cup butter, ¼ teaspoon cinnamon, and ¼ teaspoon salt. Use an electric hand mixer or potato masher to mash everything into a smooth mixture.
  4. Spread in baking dish: Transfer the sweet potato mixture evenly into the greased baking dish, spreading it out as a base layer.
  5. Prepare the topping: Melt the remaining ¼ cup of butter in a medium bowl. Stir in the remaining ¼ cup of hot honey and ¼ teaspoon cinnamon until well combined.
  6. Combine and crush toppings: Crush the corn flakes and pecans together using a food processor or by placing them into a large plastic zipper bag and crushing with a rolling pin. Mix the crushed mixture into the melted butter and honey mixture until fully coated.
  7. Top the casserole: Sprinkle the crunchy pecan and corn flake topping evenly over the sweet potato base in the baking dish.
  8. Bake the casserole: Place the dish in the preheated oven and bake for 20 minutes until the topping is golden and crisp.
  9. Serve: Remove the casserole from the oven and optionally drizzle with extra hot honey before serving for an extra kick of sweetness and spice.

Notes

  • Hot honey can vary in spiciness by brand, adjust quantity to taste.
  • Make sure to peel the sweet potatoes for a smooth mash.
  • Crushing the corn flakes and pecans finely will give a more uniform crunchy topping.
  • This dish can be prepared a day ahead and reheated before serving.
