Instructions

  1. Combine Ingredients: Add the apple juice, granulated sugar, raw cane sugar, apple cider vinegar, lemon juice, and chamomile tea bag to a saucepan. Stir occasionally to help dissolve the sugars as you bring the mixture to a boil over medium-high heat.
  2. Simmer to Reduce: Once boiling, reduce the heat slightly to maintain a rapid simmer for 15 minutes. Stir occasionally to prevent sticking. Then lower the heat further to a medium simmer for another 15 minutes, allowing the mixture to thicken and reduce to approximately 290 ml (about 1 ¼ cups).
  3. Cool and Store: Carefully pour the hot vegan honey into a sterilized jar. Allow it to cool completely to room temperature before sealing the jar tightly. Store in a cool, dark place and use as desired.

  • Use cloudy apple juice or apple cider for the best flavor and thickness. Clear apple juice may result in a thinner consistency.
