- Prepare the stuffing mixture: In a skillet over medium heat, sauté chopped onion, celery, and garlic in melted butter until softened and fragrant, about 5 minutes. In a large bowl, combine the sauteed vegetables, stuffing mix, dried sage, thyme, salt, and pepper. Gradually add chicken broth, stirring until the stuffing is moist but not soggy.
- Prepare the gravy filling: Warm the gravy in a small saucepan. If too thin, whisk in butter and flour and cook until it thickens slightly, about 3-4 minutes. Let it cool slightly before using.
- Assemble the muffins: Preheat the oven to 350°F (175°C). Grease a standard muffin tin. Press about 2 tablespoons of the stuffing mixture into the bottom and up the sides of each muffin cup to create a hollow center. Spoon a tablespoon of warm gravy into the hollow, then cover with another 2 tablespoons of stuffing to seal the gravy inside.
