Ingredients
Scale
Shrimp and Marinade
- 1 lb large shrimp (16–20 count)
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Coating and Garnish
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Lemon wedges for serving
Additional
- 4–6 wooden skewers (soaked in water for 20 minutes)
- Nonstick spray or olive oil for greasing
Instructions
- Prepare Wooden Skewers and Oven: Soak 4–6 wooden skewers in water for 20 minutes to prevent burning during cooking. Preheat your broiler to high and line a baking sheet with foil, lightly greasing it with nonstick spray or olive oil to prevent sticking.
- Marinate Shrimp: In a large mixing bowl, toss the large shrimp with olive oil, minced garlic, smoked paprika, crushed red pepper flakes (if using), salt, and black pepper until the shrimp are evenly coated with the marinade.
- Add Parmesan Coating: Sprinkle grated Parmesan cheese over the seasoned shrimp and gently toss to ensure the cheese evenly adheres to the shrimp surfaces, using the olive oil to help the cheese stick well.
- Thread Shrimp onto Skewers: Thread 4–5 shrimp per skewer by piercing through both the thick and thin ends to hold them securely, ensuring the shrimp are spaced evenly on each skewer for even cooking.
- Broil the Shrimp: Arrange the shrimp skewers in a single layer on the prepared baking sheet. Broil the shrimp for 2–3 minutes on each side, watching closely until the shrimp turn pink throughout and the Parmesan coating becomes golden and crisp.
- Garnish and Serve: Remove the skewers from the oven, sprinkle chopped fresh parsley over the top, and serve immediately with lemon wedges and your favorite dipping sauce for a zesty finish.
Notes
- Soaking wooden skewers prevents them from burning under the broiler.
- Keep a close eye while broiling to avoid overcooking shrimp, which can turn tough.
- The crushed red pepper flakes add a touch of heat but can be omitted for a milder flavor.
- Serve with lemon wedges to add a burst of fresh acidity that complements the rich Parmesan and garlic flavors.
- This recipe can be doubled or halved easily depending on serving size requirements.
