Description

This Garlic Parmesan Crockpot Chicken and Potatoes recipe offers a comforting and flavorful meal with tender chicken breasts, perfectly seasoned potatoes, and a rich garlic parmesan sauce. Cooked low and slow in the crockpot, this dish requires minimal prep and delivers a deliciously cheesy finish with melted mozzarella, making it ideal for an easy yet satisfying dinner.

Ingredients

Scale

Potatoes

  • 5 medium-sized potatoes, cubed
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Paprika, to taste

Chicken

  • 1 lb chicken breasts, cubed
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce, enough to cover the chicken

Topping

  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare the Potatoes: Wash and cube the potatoes. Spray the crockpot with cooking spray to prevent sticking. Add the cubed potatoes to the crockpot and drizzle with olive oil. Season with salt, black pepper, garlic powder, and paprika. Stir well to evenly coat the potatoes with the seasonings.
  2. Season the Chicken: Cube the chicken breasts and place them in a bowl. Season with salt, black pepper, paprika, onion powder, and Italian seasoning. Add the minced garlic and mix thoroughly. Pour enough Buffalo Wild Wings Garlic Parmesan Sauce over the chicken to cover all pieces evenly.
  3. Cook in the Crockpot: Add the seasoned chicken along with the sauce on top of the potatoes in the crockpot. Cover and cook on low heat for about 6 hours, or until the potatoes are tender and the chicken is fully cooked through. Stir occasionally if possible to help blend the flavors.
  4. Add Cheese: Once cooking is complete, sprinkle the shredded mozzarella cheese evenly over the chicken and potatoes. Cover the crockpot again and allow the cheese to melt for 5-10 minutes before serving.
  5. Serve: Serve the Garlic Parmesan Chicken and Potatoes hot. For extra flavor, you may optionally top with ranch dressing before serving.

Notes

  • You can substitute mozzarella cheese with parmesan or a cheese blend for varied flavor.
  • Adjust seasoning amounts according to personal taste preferences.
  • Stirring the dish occasionally during cooking can help distribute flavors but is not mandatory.
  • If your crockpot runs hot, check the chicken’s doneness earlier to avoid overcooking.
  • Leftovers keep well refrigerated for up to 3 days and reheat nicely in the microwave or oven.
