Instructions

  1. Prepare the pan: Line a 9×9 inch cake pan with plastic wrap, ensuring it covers the edges for easy removal later, and set aside.
  2. Make the filling: In a large bowl, whisk together the pink lemonade concentrate and sweetened condensed milk. Add a drop of Americolor Deep Pink gel food coloring if desired for extra color. Gently fold in the whipped topping until the mixture is smooth and lump-free.
  3. Freeze the filling: Pour the filling into the lined cake pan and smooth the surface. Place in the freezer overnight to firm up.
  4. Prepare graham crackers: Cut the 12 full graham cracker sheets in half to yield 24 squares, which will be used as sandwich bases.
  5. Assemble sandwiches: Remove the frozen filling from the freezer and turn it out onto another sheet of plastic wrap. Cut the filling into 12 equal squares. Using a small spatula, carefully lift each filling square and place it onto a graham cracker square. Top with another graham cracker square to form sandwiches. Place the sandwiches on a parchment-lined baking sheet and immediately return them to the freezer for at least 30 minutes to firm up.
  6. Prepare for dipping: Set up your dipping station by placing sprinkles in small bowls on a rimmed baking sheet to catch drips. Have paper towels ready, as dipping can get messy.
