  • 3 Tbsp brown sugar (or granulated monk fruit sweetener)
  • 1 Tbsp cinnamon powder

For the Glaze:

  • 1 cup powdered sugar (or powdered monk fruit sweetener)
  • 2 Tbsp milk of choice


Instructions

  1. Prepare the Dough: In a stand mixer, combine flour, yeast, sugar, and salt. Add Greek yogurt and knead on low speed. Gradually pour in water until a dough forms. Knead for 8-10 minutes until smooth and stretchy.
  2. Let the Dough Rise: Transfer the dough to a greased bowl, cover it, and let it rise for 60-90 minutes or until it has doubled in size.
  3. Make the Filling: In a small bowl, mix together the brown sugar and cinnamon powder and set aside.
  4. Shape the Rolls: Punch down the risen dough and roll it out on a floured surface into an 18 x 10-inch rectangle. Lightly brush the surface with water or almond milk, then evenly sprinkle the cinnamon sugar mixture over it.
  5. Roll and Cut: Roll the dough tightly into a log, pinching the seam to seal. Use string or dental floss to cut the dough into 12 equal pieces.
  6. Second Rise: Place the rolls into a 9×12-inch pan lined with parchment paper, spacing them about ½ inch apart. Cover and let rise for 30 minutes.
  7. Preheat the Oven: Preheat your oven to 350°F (180°C).
