For the Dough:
- 3 ½ cups (420g) bread flour, sifted and leveled
- 2 tsp instant yeast
- 2 Tbsp sugar
- 1 tsp salt
- 1 â…“ cups (333g) fat-free Greek yogurt, plain or unsweetened
- ½ cup water (or milk of choice)
For the Filling:
- 3 Tbsp brown sugar (or granulated monk fruit sweetener)
- 1 Tbsp cinnamon powder
For the Glaze:
- 1 cup powdered sugar (or powdered monk fruit sweetener)
- 2 Tbsp milk of choice
Instructions
- Prepare the Dough: In a stand mixer, combine flour, yeast, sugar, and salt. Add Greek yogurt and knead on low speed. Gradually pour in water until a dough forms. Knead for 8-10 minutes until smooth and stretchy.
- Let the Dough Rise: Transfer the dough to a greased bowl, cover it, and let it rise for 60-90 minutes or until it has doubled in size.
- Make the Filling: In a small bowl, mix together the brown sugar and cinnamon powder and set aside.
- Shape the Rolls: Punch down the risen dough and roll it out on a floured surface into an 18 x 10-inch rectangle. Lightly brush the surface with water or almond milk, then evenly sprinkle the cinnamon sugar mixture over it.
- Roll and Cut: Roll the dough tightly into a log, pinching the seam to seal. Use string or dental floss to cut the dough into 12 equal pieces.
- Second Rise: Place the rolls into a 9×12-inch pan lined with parchment paper, spacing them about ½ inch apart. Cover and let rise for 30 minutes.
- Preheat the Oven: Preheat your oven to 350°F (180°C).
- Bake: Bake the rolls for 15-20 minutes or until they are golden brown on top.
- Make the Glaze: Whisk together the powdered sugar and milk until smooth. Adjust the consistency by adding more milk or powdered sugar as needed.
- Glaze and Serve: Allow the cinnamon rolls to cool slightly before drizzling the glaze on top. Serve warm and enjoy!
