Taco Skillet

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 tablespoons taco seasoning, or more to taste
  • 14 ounces black beans, drained & rinsed
  • 16 ounces salsa, use your favorite
  • 1 ½ cups shredded cheddar cheese, divided

Instructions

  1. Cook the ground beef: Bring a heavy-bottomed 12″ skillet to medium-high heat, add the ground beef, and cook for about 2 minutes while breaking up the meat as it cooks. Once browned, remove the meat from the skillet and set aside.
  2. Sauté the onions: Return the skillet to medium heat, add the chopped onions, and cook for about 5 minutes until translucent, stirring frequently to prevent burning.
  3. Combine beef and seasoning: Add the cooked ground beef back to the skillet along with the taco seasoning. Stir well to evenly coat the meat with the seasoning.
  4. Add beans, salsa, and cheese: Mix in the drained and rinsed black beans, salsa, and 1 cup of the shredded cheddar cheese. Stir everything together until well combined and heated through.
