Ingredients
Scale
Chicken
- 2 boneless skinless chicken breasts
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
Sauce and Vegetables
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 0.5 cup chicken broth
- 5.2 ounces Boursin garlic & fine herbs cheese
- 0.5 cup heavy cream
- 1 tablespoon fresh parsley, chopped
Instructions
- Season the Chicken: Pat chicken dry and season both sides evenly with salt and black pepper to enhance flavor.
- Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Add chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Remove chicken from skillet and set aside.
- Cook Mushrooms: In the same skillet, melt butter and add sliced mushrooms. Cook, stirring occasionally, until mushrooms are browned and softened, about 6-7 minutes.
- Sauté Garlic: Add minced garlic to the mushrooms and sauté for 1 minute until fragrant, stirring constantly to avoid burning.
- Deglaze Pan: Pour in chicken broth, scraping the browned bits from the bottom of the pan to release flavor. Let the broth simmer for 2-3 minutes to reduce slightly.
- Create Sauce: Stir in the Boursin cheese until melted and incorporated, then add heavy cream and mix until the sauce is smooth and creamy.
- Simmer Chicken: Return the chicken breasts to the skillet, spoon some sauce over them, cover the pan, and let simmer for 8-10 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Garnish and Serve: Sprinkle freshly chopped parsley over the dish for a burst of color and freshness. Serve the chicken hot with the creamy mushroom sauce.
Notes
- Use a meat thermometer to ensure chicken is fully cooked (165°F internal temperature).
- You can substitute heavy cream with half-and-half for a lighter sauce, but it may be less rich.
- For extra flavor, add a splash of white wine when deglazing with chicken broth.
- Serve with mashed potatoes, rice, or crusty bread to enjoy the creamy sauce.
- Boursin cheese can be found in most grocery stores in the cheese section, often near the cream cheese or specialty cheeses.
