Description

This Easy Boursin Chicken recipe features tender, juicy chicken breasts cooked in a creamy garlic and herb Boursin cheese sauce with mushrooms and fresh parsley. It’s a quick and elegant stovetop dish perfect for a flavorful weeknight dinner or special occasion.

Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter

Sauce and Vegetables

  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 0.5 cup chicken broth
  • 5.2 ounces Boursin garlic & fine herbs cheese
  • 0.5 cup heavy cream
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Season the Chicken: Pat chicken dry and season both sides evenly with salt and black pepper to enhance flavor.
  2. Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Add chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Remove chicken from skillet and set aside.
  3. Cook Mushrooms: In the same skillet, melt butter and add sliced mushrooms. Cook, stirring occasionally, until mushrooms are browned and softened, about 6-7 minutes.
  4. Sauté Garlic: Add minced garlic to the mushrooms and sauté for 1 minute until fragrant, stirring constantly to avoid burning.
  5. Deglaze Pan: Pour in chicken broth, scraping the browned bits from the bottom of the pan to release flavor. Let the broth simmer for 2-3 minutes to reduce slightly.
  6. Create Sauce: Stir in the Boursin cheese until melted and incorporated, then add heavy cream and mix until the sauce is smooth and creamy.
  7. Simmer Chicken: Return the chicken breasts to the skillet, spoon some sauce over them, cover the pan, and let simmer for 8-10 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Garnish and Serve: Sprinkle freshly chopped parsley over the dish for a burst of color and freshness. Serve the chicken hot with the creamy mushroom sauce.

Notes

  • Use a meat thermometer to ensure chicken is fully cooked (165°F internal temperature).
  • You can substitute heavy cream with half-and-half for a lighter sauce, but it may be less rich.
  • For extra flavor, add a splash of white wine when deglazing with chicken broth.
  • Serve with mashed potatoes, rice, or crusty bread to enjoy the creamy sauce.
  • Boursin cheese can be found in most grocery stores in the cheese section, often near the cream cheese or specialty cheeses.
