Description

This refreshing Cucumber and Avocado Sandwich combines creamy herbed goat cheese, crisp romaine lettuce, fresh cucumber slices, and ripe avocado with a zesty lemon juice drizzle and crunchy alfalfa sprouts. Perfectly layered on whole grain and seed bread, this easy-to-make sandwich is a healthy, flavorful, and satisfying snack or light meal.

Ingredients

Scale

Bread and Spread

  • 4 slices Dave’s Killer Bread 21 Whole Grains and Seeds
  • 4 ounces herbed goat cheese, at room temperature

Vegetables and Toppings

  • 2 Romaine lettuce leaves, washed and dried
  • 1/2 large cucumber, peeled and sliced
  • 1 large avocado, peeled, pitted, and sliced
  • Squeeze of fresh lemon juice
  • ½ cup alfalfa sprouts
  • Salt and black pepper to taste

Instructions

  1. Spread the goat cheese: Evenly spread the herbed goat cheese on one side of each bread slice, creating a smooth and flavorful base for the sandwich fillings.
  2. Layer the vegetables: On one slice of bread, arrange the romaine lettuce leaves first, then layer with the sliced cucumber and avocado. Drizzle a little fresh lemon juice over the cucumber and avocado to enhance the flavor and prevent browning.
  3. Add sprouts and seasonings: Sprinkle the alfalfa sprouts evenly over the avocado layer, then season with salt and freshly ground black pepper according to your taste.
  4. Assemble the sandwich: Place another slice of bread on top of the fillings, goat cheese side down, and gently press to secure the sandwich together.
  5. Repeat for second sandwich and serve: Repeat the assembly steps to make the second sandwich. Serve immediately to enjoy the best texture and flavor.

Notes

  • Use ripe but firm avocado to avoid a mushy sandwich.
  • You can substitute the alfalfa sprouts with other sprouts like radish or broccoli for added flavor.
  • For a vegan version, substitute the goat cheese with a plant-based spread.
  • Toast the bread slightly if you prefer a crunchier texture.
  • This sandwich is best enjoyed fresh to prevent sogginess.
