Description

A delicious and easy Crock Pot Beef and Broccoli recipe featuring tender slices of beef slow-cooked with a savory soy-based sauce and perfectly cooked broccoli. This comforting dish is ideal for busy weeknights and pairs wonderfully with steamed white rice.

Ingredients

Scale

Beef and Sauce

  • 2 pounds sirloin steak or boneless beef chuck roast, sliced thin
  • 1 cup beef broth
  • 1/2 cup low sodium soy sauce
  • 1/4 cup brown sugar
  • 1 Tablespoon sesame oil
  • 3 garlic cloves, minced

Thickening Mixture

  • 4 Tablespoons cornstarch
  • 4 Tablespoons water

Vegetables

  • 1 bag (12 ounces) frozen broccoli florets

Optional

  • Cooked white rice, for serving

Instructions

  1. Prepare sauce and beef: In the insert of a 6-quart crock pot (slow cooker), whisk together beef broth, low sodium soy sauce, brown sugar, sesame oil, and minced garlic until well combined. Add the thinly sliced beef into the liquid and toss to coat each piece thoroughly.
  2. Cook beef: Cover the crock pot with the lid and cook on low heat for 5 hours, allowing the beef to become tender and soak up the flavorful sauce.
  3. Make thickening mixture: In a small bowl, whisk together cornstarch and water until smooth. Pour this mixture into the crock pot and stir well to combine with the beef and sauce.
  4. Add broccoli and thicken sauce: Place the frozen broccoli florets over the beef and sauce and gently stir to mix. Cover again with the lid and cook on low for an additional 30 minutes to cook the broccoli and thicken the sauce to a nice consistency.
  5. Serve: Spoon the beef and broccoli mixture over warm cooked white rice if desired. Serve immediately and enjoy a savory slow-cooked meal.

Notes

  • For best results, slice beef thinly against the grain to ensure tenderness.
  • You can substitute fresh broccoli if preferred, but adjust cooking time accordingly to maintain crunch.
  • Serve with steamed white rice or brown rice for a complete meal.
  • If you prefer a gluten-free version, use gluten-free soy sauce.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
