Ingredients
Scale
Chicken
- 4 chicken breasts
Sauce
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Sear Chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then sear each side until golden brown, about 4-5 minutes per side. Remove chicken from skillet and set aside.
- Sauté Garlic: In the same skillet, reduce heat to medium and add minced garlic. Cook for about 1 minute until fragrant but not browned.
- Make Sauce: Add the heavy cream and sun-dried tomatoes to the skillet. Stir well to combine and bring to a simmer.
- Add Spinach and Cheese: Stir in fresh spinach and grated Parmesan cheese. Cook until the spinach wilts and the sauce thickens slightly, about 3-4 minutes.
- Simmer Chicken in Sauce: Return the seared chicken breasts back to the skillet, spooning some sauce over the top. Let everything simmer together for 6-8 minutes until the chicken is cooked through and the sauce has thickened.
- Serve: Remove from heat and serve the creamy Tuscan chicken with your choice of pasta, rice, or crusty bread to soak up the delicious sauce.
Notes
- For best results, use chicken breasts of even thickness or pound to uniform size to ensure even cooking.
- Sun-dried tomatoes packed in oil will enrich the sauce’s flavor; drain some of the oil if needed to avoid excess greasiness.
- Serve with cooked pasta, steamed rice, or garlic bread for a complete meal.
- Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
