Description

This creamy ranch chicken crock pot recipe combines tender chicken, golden Yukon potatoes, and a rich blend of cream cheese, sour cream, and ranch seasoning to create a comforting and flavorful one-pot meal. Perfectly cooked slow and finished with crispy bacon and fresh herbs, it’s an easy and satisfying dinner ideal for busy days.

Ingredients

Scale

Chicken and Potatoes

  • 2 pounds chicken thighs or breasts
  • 1.5 pounds Yukon gold potatoes, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth

Dairy and Seasoning

  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 packet ranch seasoning mix (about 1 ounce)

Toppings and Garnish

  • 1/2 cup cooked bacon bits
  • 2 tablespoons fresh chopped parsley or chives (optional garnish)

Instructions

  1. Optional Sear Chicken: Heat a skillet over medium-high heat and add a little oil. Sear the chicken thighs or breasts for 2–3 minutes per side until golden. This step adds extra flavor but can be skipped.
  2. Prepare Potatoes: Place the diced Yukon gold potatoes and minced garlic evenly at the bottom of the crock pot. Sprinkle half of the ranch seasoning mix over the potatoes for seasoning.
  3. Layer Chicken and Broth: Arrange the chicken pieces on top of the potatoes. Pour the chicken broth evenly over the chicken, then sprinkle the remaining ranch seasoning on top to infuse the flavors.
  4. Slow Cook: Cover the crock pot and cook on low for 6 to 7 hours or on high for 3 to 4 hours. The chicken should be fully cooked, tender, and juicy.
  5. Add Creamy Ingredients: About 30 minutes before serving, add the softened cream cheese and sour cream to the crock pot. Stir thoroughly to create a smooth, creamy sauce that coats the chicken and potatoes.
  6. Finish and Serve: Prior to serving, sprinkle the crispy bacon bits over the top and garnish with fresh chopped parsley or chives for a pop of color and flavor. Serve warm and enjoy a hearty, creamy meal.

Notes

  • For best flavor, sear the chicken before adding it to the crock pot, but it is optional.
  • You can substitute Greek yogurt for sour cream for a lighter option.
  • Adjust seasoning to taste; ranch seasoning packets vary in saltiness.
  • Use bone-in chicken thighs for extra moisture and flavor.
  • Slow cooking on low yields the most tender chicken and creamy potatoes.
