Description

This Cinnamon Roll Poke Cake combines the ease of a classic yellow cake mix with the sweet, spicy flavors of cinnamon and brown sugar, finished with a luscious glaze that seeps into every bite. Perfectly moist and bursting with comforting cinnamon roll taste, it’s an effortless dessert that delights any crowd.

Ingredients

Scale

Cake

  • 1 box yellow cake mix
  • 3 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract

Cinnamon Filling

  • 1/4 cup dark brown sugar
  • 2 tsp ground cinnamon

Glaze

  • 1 cup powdered sugar
  • 1/4 cup melted butter

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish thoroughly to prevent the cake from sticking.
  2. Mix and assemble cake: In a large bowl, combine the yellow cake mix, eggs, milk, and vanilla extract until smooth. Pour half of the batter into the prepared dish. Sprinkle the brown sugar and cinnamon mixture evenly over the batter. Pour the remaining cake batter on top, spreading it carefully to cover the cinnamon layer.
  3. Bake the cake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  4. Cool and poke holes: Remove the cake from the oven and let it cool completely. Once cooled, use the handle of a wooden spoon or a similar tool to poke numerous holes all over the surface of the cake.
  5. Add glaze: In a small bowl, whisk together the powdered sugar with melted butter to form a smooth glaze. Pour this glaze evenly over the cake, allowing it to seep into the holes, creating a moist, flavorful interior. Chill for at least 30 minutes before serving for best results.

Notes

  • Use room temperature eggs and milk to ensure a smooth batter.
  • For an extra cinnamon punch, sprinkle additional cinnamon on top before glazing.
  • You can substitute the yellow cake mix with a vanilla cake mix if preferred.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Serve with a dollop of whipped cream or vanilla ice cream for an indulgent treat.
