Instructions
- Preheat oven: Preheat your oven to 180°C (350°F) standard or 160°C (320°F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper to prevent sticking.
- Mix dry ingredients: In a large mixing bowl, combine the plain flour, baking powder, baking soda, salt, and 150 grams of sugar. Stir these together well, then add the chopped apple and mix briefly just to distribute the apple evenly.
- Mix wet ingredients: In a separate bowl, whisk together the eggs, vanilla extract, vegetable oil, and Greek yogurt until smooth and well combined.
- Combine wet and dry: Gradually add the wet ingredients into the dry ingredients bowl. Mix gently using a spatula or wooden spoon until just combined, taking care not to overmix to keep the cake light and tender.
- Prepare cake for baking: Spoon the batter into the prepared cake pan, smoothing the surface evenly.
- Make cinnamon topping: In a small bowl, mix together the 50 grams of sugar, ground cinnamon, and melted butter until the mixture forms small lumps. Sprinkle this cinnamon sugar topping evenly over the cake batter in the pan.
- Bake the cake: Place the cake in the preheated oven and bake for approximately 30 to 35 minutes, or until a skewer inserted into the center comes out clean. Once baked, remove from the oven and allow the cake to cool on a wire rack.
- Prepare glaze: While the cake cools, mix the sifted icing sugar with 1 to 2 tablespoons of milk to form a smooth glaze. Adjust the consistency so it’s pourable but not too thin.
- Glaze the cake: Drizzle the glaze evenly over the cooled cake to add a sweet finishing touch. Let the glaze set before serving.
