Description

This Cheese Crust Breakfast Pizza is a delicious, low-carb alternative to traditional pizza dough. Made with a crispy cheese crust, it’s topped with fluffy eggs, savory breakfast sausage, and optional toppings like red onion and red pepper flakes for a flavorful start to your day. Perfect for breakfast or brunch, this recipe combines easy prep with a satisfying blend of cheesy goodness and hearty protein.

Ingredients

Scale

Cheese Crust

  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Toppings

  • 4 large eggs
  • ½ lb (225 g) breakfast sausage, cooked and crumbled
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ¼ cup red onion, diced (optional)
  • 1 tbsp fresh parsley or chives, chopped
  • 1 tsp red pepper flakes (optional, for heat)
  • Salt & black pepper, to taste

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) to ensure it’s hot enough to crisp the cheese crust evenly.
  2. Mix Cheese Crust: In a bowl, combine 2 cups shredded mozzarella and 1 cup shredded cheddar cheese thoroughly.
  3. Form Cheese Crust: Spread the cheese mixture evenly onto a baking sheet, shaping it into a pizza crust form.
  4. Bake Crust: Bake the cheese crust for 10 minutes or until it turns golden and crispy.
  5. Prepare Eggs: In another bowl, beat the 4 large eggs and season with salt and black pepper to your taste.
  6. Add Eggs to Crust: Carefully pour the seasoned eggs over the pre-baked cheese crust, spreading them evenly.
  7. Add Toppings: Sprinkle cooked and crumbled breakfast sausage, diced red onion if using, red pepper flakes for heat (optional), and the remaining shredded mozzarella and cheddar cheese evenly over the eggs.
  8. Bake Assembled Pizza: Return the pizza to the oven and bake for an additional 15 minutes, or until the eggs are fully set and toppings are heated through.
  9. Garnish and Serve: Remove from oven and garnish with fresh parsley or chives before slicing and serving warm.

Notes

  • For a vegetarian version, omit the sausage and add extra vegetables like bell peppers or mushrooms.
  • You can substitute breakfast sausage with turkey sausage for a leaner option.
  • Red onion and red pepper flakes are optional but add nice flavor and a slight kick.
  • Use parchment paper or a silicone baking mat to prevent sticking when baking the cheese crust.
  • This recipe is gluten-free due to using a cheese crust instead of traditional dough.
