- ½ cup shredded cheddar cheese
- ¼ cup red onion, diced (optional)
- 1 tbsp fresh parsley or chives, chopped
- 1 tsp red pepper flakes (optional, for heat)
- Salt & black pepper, to taste
Instructions
- Preheat Oven: Preheat the oven to 400°F (200°C) to ensure it’s hot enough to crisp the cheese crust evenly.
- Mix Cheese Crust: In a bowl, combine 2 cups shredded mozzarella and 1 cup shredded cheddar cheese thoroughly.
- Form Cheese Crust: Spread the cheese mixture evenly onto a baking sheet, shaping it into a pizza crust form.
- Bake Crust: Bake the cheese crust for 10 minutes or until it turns golden and crispy.
- Prepare Eggs: In another bowl, beat the 4 large eggs and season with salt and black pepper to your taste.
- Add Eggs to Crust: Carefully pour the seasoned eggs over the pre-baked cheese crust, spreading them evenly.
- Add Toppings: Sprinkle cooked and crumbled breakfast sausage, diced red onion if using, red pepper flakes for heat (optional), and the remaining shredded mozzarella and cheddar cheese evenly over the eggs.
- Bake Assembled Pizza: Return the pizza to the oven and bake for an additional 15 minutes, or until the eggs are fully set and toppings are heated through.
- Garnish and Serve: Remove from oven and garnish with fresh parsley or chives before slicing and serving warm.
Notes
- For a vegetarian version, omit the sausage and add extra vegetables like bell peppers or mushrooms.
- You can substitute breakfast sausage with turkey sausage for a leaner option.
- Red onion and red pepper flakes are optional but add nice flavor and a slight kick.
- Use parchment paper or a silicone baking mat to prevent sticking when baking the cheese crust.
- This recipe is gluten-free due to using a cheese crust instead of traditional dough.
