Ingredients
Scale
Salmon
- 4 pieces salmon fillets (6 oz each), skin-on preferred
- 4 tsp Cajun seasoning
- 1 tbsp cooking oil
Avocado Salsa
- 2 avocados, diced
- 1 cup cucumber, diced
- 1/4 cup red onion, diced
- 1/4 cup green onion, chopped
- 1 jalapeño, finely diced
- 1 tbsp cilantro, chopped
- 1 tbsp parsley, chopped
- 1 tbsp lime juice
- 1 tbsp lemon juice
- Salt to taste
Instructions
- Season the salmon: Sprinkle Cajun seasoning evenly on both sides of each salmon fillet. Dice all the vegetables and herbs needed for the salsa. Allow the salmon to sit for about 3 minutes while prepping to let the seasoning absorb.
- Cook the salmon: Heat cooking oil in a skillet over medium-high heat. Once hot, place the salmon fillets skin-side down and cook until golden brown and slightly blackened, about 3 to 4 minutes per side, ensuring it cooks through but remains moist.
- Prepare the avocado salsa: In a mixing bowl, gently combine diced avocado, cucumber, red and green onions, jalapeño, cilantro, parsley, lime juice, and lemon juice. Mix carefully to prevent the avocado from mashing, keeping the salsa chunky and fresh.
- Season and serve: Add salt to taste to the salsa and stir lightly. Serve the salsa immediately over the warm salmon fillets. Taste and adjust seasoning as needed before serving.
Notes
- Skin-on salmon helps hold the fillet together during cooking and adds extra flavor.
- Adjust the amount of jalapeño for desired heat level.
- Serve immediately for best texture as avocado can brown quickly.
- Use fresh herbs to enhance the salsa’s brightness.
- For a low-fat option, use minimal cooking oil or a non-stick skillet.
