Ingredients
Scale
Fruit Filling
- 2 cups fresh blackberries
- 2 tbsp lemon juice
- ½ cup brown sugar
Crumble Base and Topping
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter (cold, cubed)
- 1 cup rolled oats
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish to ensure your bars don’t stick.
- Prepare the Crumble Mixture: In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Cut in the cold, cubed butter using a pastry cutter or fingers until the mixture becomes crumbly in texture.
- Add Oats: Stir in the rolled oats until evenly distributed throughout the crumble mixture.
- Press Base Layer: Take about two-thirds of the crumble mixture and press it firmly into the bottom of the greased baking dish to form the crust.
- Mix Blackberry Filling: In another bowl, gently mix the fresh blackberries with lemon juice and brown sugar, being careful not to crush the berries too much.
- Assemble the Bars: Spread the blackberry filling evenly over the crust layer, then sprinkle the remaining crumble mixture on top to create the crumble topping.
- Bake: Place the baking dish in the oven and bake for 30-35 minutes or until the top is golden brown and the filling is bubbling.
- Cool and Slice: Remove from the oven and allow the bars to cool completely in the pan before slicing into 12 bars for serving.
Notes
- For best results, use fresh, ripe blackberries that are not overly soft.
- You can substitute the all-purpose flour with gluten-free flour blend to make it gluten-free.
- Ensure the butter is cold to get a proper crumbly texture in the topping and crust.
- Store leftover bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- These bars can be served with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
