Description

A creative and delicious breakfast twist featuring crispy rice paper spirals filled with fluffy scrambled eggs, savory bacon, and gooey mozzarella cheese. Perfectly seasoned with everything bagel seasoning and baked to golden perfection for a fun and flavorful start to your day.

Ingredients

Scale

Main Ingredients

  • 4 sheets Rice Paper Sheets (A crispy shell that makes this dish fun and unique)
  • 5 large Eggs (4 for the filling, 1 for dipping)
  • 2 strips Bacon or Turkey Bacon (Adds savory flavor and crunch; turkey bacon can be used as a lighter alternative)
  • 0.5 cup Shredded Mozzarella (For creaminess and gooey texture)
  • 1 tablespoon Everything Bagel Seasoning (For extra flavor)

Additional

  • Light oil (for lightly oiling the surface to place rice papers on)

Instructions

  1. Prepare the scrambled eggs: In a non-stick pan over medium heat, whisk 4 eggs until they are just set and fluffy, about 3-5 minutes. Remove from heat and set aside to cool slightly.
  2. Beat the dipping egg: Beat the remaining 1 egg in a shallow dish; this will be used to lightly coat the rice paper sheets.
  3. Dip the rice paper: Quickly dip each rice paper sheet into the beaten egg until lightly coated. Lay them slightly overlapping on a lightly oiled surface to prevent sticking.
  4. Assemble the filling: Spoon the fluffy scrambled eggs down the center of each rice paper sheet. Top with chopped bacon strips and shredded mozzarella cheese.
  5. Roll the spirals: Starting from one end, roll the rice paper tightly into a cylinder, making sure to form a compact spiral and seal the edges well to keep the filling inside.
  6. Brush and season: Brush any leftover beaten egg over the top of each spiral to help seal and add shine. Generously sprinkle everything bagel seasoning over the spirals for added flavor.
  7. Bake: Place the rice paper spirals on a baking sheet and bake in a preheated oven at 400°F (200°C) for 15-20 minutes, or until golden brown and crispy.
  8. Serve: Remove from oven and serve warm, enjoying the crispy exterior and savory, creamy filling.

Notes

  • Use turkey bacon for a lighter variation with less fat.
  • Ensure the rice paper sheets are dipped quickly to avoid becoming too soft and tearing.
  • Serve immediately after baking to enjoy the crispy texture.
  • Can be accompanied by a side of fresh fruit or green salad for a balanced breakfast.
  • Everything bagel seasoning can be substituted with your favorite seasoning blend if desired.
