Ingredients
Scale
Noodles
- 1 package Flat Rice Noodles (fresh or soaked dried)
Sauces & Oils
- 3 tablespoons Soy Sauce (low-sodium recommended)
- 2 tablespoons Oyster Sauce (or mushroom oyster sauce for vegetarian)
- 1 tablespoon Sesame Oil (lightly used for flavor)
- 1 tablespoon Cooking Oil (for sautéing)
Vegetables
- 1 cup Bell Peppers (chopped)
- 1 cup Bean Sprouts (added at the end)
- 1 bunch Green Onions (chopped)
Proteins
- 1 cup Chicken (sliced thinly)
- 1 cup Tofu (firm, pan-fried)
- 1 cup Shrimp (sautéed until cooked)
Instructions
- Prepare Noodles: Soak dried flat rice noodles in warm water for about 30 minutes until soft, or if using fresh noodles, set them aside ready for cooking.
- Heat the Wok: Place a large wok or skillet over medium-high heat and add a tablespoon of cooking oil to warm up.
- Cook Protein: Sauté your chosen proteins—chicken, tofu, and shrimp—individually or together in the hot oil until they turn golden brown and are cooked through, typically about 3 to 5 minutes. Remove and set aside.
- Stir-Fry Vegetables: In the same wok, add chopped bell peppers and green onions; stir-fry these vibrant vegetables for 2 to 3 minutes until slightly tender but still crisp.
- Add Noodles and Protein: Incorporate the soaked or fresh flat rice noodles along with the cooked proteins back into the wok. Pour in the soy sauce, oyster sauce, and a light drizzle of sesame oil, tossing everything thoroughly to evenly coat the noodles and ingredients in the savory sauces.
- Finish with Bean Sprouts: Add the bean sprouts and stir gently for about one minute to retain their crunch and freshness, then remove from heat and serve your delicious Fried Hor Fun hot.
Notes
- Use low-sodium soy sauce to control salt levels and enhance healthiness.
- For a vegetarian version, substitute oyster sauce with mushroom oyster sauce and use tofu as the primary protein.
- Do not over-soak fresh rice noodles to prevent them from becoming mushy during stir-frying.
- Ensure the wok or skillet is hot enough before stir-frying to achieve ideal texture and flavor.
- Add sesame oil at the end for aroma but avoid overheating it, as it can lose flavor.
