Dumpling Filling

  • 1 egg white

Dumplings

Dipping Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Optional: chili flakes or sriracha, to taste


Instructions

  1. Prepare the filling: In a large mixing bowl, combine ground beef, minced onion, garlic, ginger, curry powder, soy sauce, sesame oil, cornstarch, egg white, and vegetable broth or water. Mix thoroughly until well combined.
  2. Chill the filling: Cover the bowl and refrigerate for 15-20 minutes to allow the flavors to meld and the mixture to firm up slightly for easier handling.
  3. Assemble dumplings: Arrange dumpling wrappers on a clean surface with a small bowl of water nearby. Place about 1 teaspoon of the curry beef filling in the center of each wrapper. Moisten the edge of half the wrapper with water, fold it over to form a half-moon, and press edges firmly to seal.
  4. Prepare for air frying: Place assembled dumplings on a parchment-lined tray or plate, ensuring they don’t touch. Preheat your air fryer to 375°F (190°C) for 3-5 minutes. Lightly spray the bottom of the air fryer basket with cooking oil spray.
  5. Air fry dumplings: Arrange dumplings in a single layer in the basket, not overcrowding. Lightly spray the tops with oil spray. Air fry for 8-12 minutes, flipping halfway through to ensure even crisping.
