Dumpling Filling
- 1/2 pound ground beef
- 1 small onion, finely minced

- 1 teaspoon cornstarch
- 1 egg white
- 2 tablespoons vegetable broth or water

- 1 package dumpling wrappers (about 30 wrappers)
- Water, for sealing dumplings
- Cooking oil spray
Dipping Sauce
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- Optional: chili flakes or sriracha, to taste
Instructions
- Prepare the filling: In a large mixing bowl, combine ground beef, minced onion, garlic, ginger, curry powder, soy sauce, sesame oil, cornstarch, egg white, and vegetable broth or water. Mix thoroughly until well combined.
- Chill the filling: Cover the bowl and refrigerate for 15-20 minutes to allow the flavors to meld and the mixture to firm up slightly for easier handling.
- Assemble dumplings: Arrange dumpling wrappers on a clean surface with a small bowl of water nearby. Place about 1 teaspoon of the curry beef filling in the center of each wrapper. Moisten the edge of half the wrapper with water, fold it over to form a half-moon, and press edges firmly to seal.
- Prepare for air frying: Place assembled dumplings on a parchment-lined tray or plate, ensuring they don’t touch. Preheat your air fryer to 375°F (190°C) for 3-5 minutes. Lightly spray the bottom of the air fryer basket with cooking oil spray.
- Air fry dumplings: Arrange dumplings in a single layer in the basket, not overcrowding. Lightly spray the tops with oil spray. Air fry for 8-12 minutes, flipping halfway through to ensure even crisping.
- Prepare dipping sauce: While dumplings cook, whisk together soy sauce, rice vinegar, and sesame oil in a small bowl. Add chili flakes or sriracha if desired for heat.
- Serve: Remove hot, crispy dumplings from the air fryer and serve immediately with the prepared dipping sauce.
