- 4 tbsp almond butter (preferably Barney Butter for extra smooth texture)
- 1 1/2 tbsp maple syrup
- 1 cup unsweetened almond milk (such as Almond Breeze)
- 5 tbsp chia seeds
- Pinch of sea salt
Instructions
- Mix Ingredients: In a medium bowl, combine the almond butter, maple syrup, and almond milk. Whisk well until the almond butter is fully incorporated and the mixture is smooth.
- Add Chia Seeds: Stir in the chia seeds and a pinch of sea salt, making sure the seeds are evenly distributed throughout the mixture.
- Let it Set: Cover the bowl or transfer the mixture to individual serving jars. Refrigerate for at least 3 hours or overnight to allow the chia seeds to absorb the liquid and form a pudding-like texture.
- Serve: Once set, stir the pudding to ensure even consistency. Serve chilled on its own or topped with fresh fruit, nuts, or granola if desired.
Notes
- For a thicker pudding, increase chia seeds to 6 tbsp.
- Use any nut butter of your choice if almond butter is unavailable.
- Adjust sweetness by adding more or less maple syrup according to taste.
- Make it vegan and gluten-free by using plant-based milk and pure maple syrup.
